Soup :) my favorite any time of year! the more adventuresome the
better. This recipe is from Martha Stewarts Living Magazine Aug. 2011.
It is a really easy chop and blend recipe with no cooking required. So
full of goodness and flavor.
Just a few quick flicks of the puree button on your blender and Chill... Your first sip will fill you with goodness and great nutrition. Makes 4 servings, enough to fill up a few NutriSqueeze bags for later and a tall cool glass for now. Tasty and nutritious with all in season veggies.
Ingredients:
2 lbs. of Tomatoes (about 4) cored and coarsely chopped
1/2 of an English Cucumber, peeled, seeded and coarsely chopped
1/2 an onion coarsely chopped
1 small garlic clove ~ or to taste
2 ounces of blanched almonds ~
toasted on cookie sheet for about 10 minutes, til golden brown.
3/4 of a cup of water or chicken broth,
add more to smooth consistence for NutriSqueeze bags
2 Tablespoons of extra virgin olive oil
2 tablespoons of sherry vinegar
course salt and fresh ground pepper to taste
3 Easy Steps:
1) puree together the tomato, cucumber, onion, garlic, almonds,water, oil, vinegar and salt to taste, until smooth, season with fresh pepper.
2) Refrigerate for at least 45 minutes to blend flavors, season again with salt and pepper to taste.
3) Fill NutriSqueeze bags, refrigerate for up to 2 days
Gently squeeze the NutriSqueeze bags to blend before enjoying.
